The Indiana State Fair is over but we received some fair news recently that is worth bragging about. Day Nursery Hendricks County Center cook Chris Whitaker won a 2nd place ribbon in the HOME AND FAMILY ARTS – CULINARY ARTS – Heart Healthy – Speciality Diet category for her allergy free banana muffin.
Thanks to Chris for sharing her award winning recipe:
3 Large ripe bananas- mashed
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup of applesauce
1 tsp vanilla
1/3 cup melted milk-free margarine
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups white flour
Mix dry ingredients. Mix together banana and all liquids. Sift together gently. Pour into muffin cups and bake for 20-25 minutes @ 350 degrees (F)
Yields 12-16 muffins.
